Cajun Gumbo
A Louisiana classic — bold, smoky, and deeply satisfying.
Cajun Gumbo is the heart of Louisiana cooking: a rich, dark roux-based stew loaded with sausage, shrimp, and chicken, seasoned with MooMoo & Butter's Holy Trinity and Cajun Cowboy. Served over rice, it's comfort food with soul.
Preparation

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly to prevent burning. Continue cooking, stirring frequently, until the mixture reaches a deep brown color, similar to dark chocolate, approximately 10–15 minutes. Avoid scorching; if black specks appear, the roux is burned and should be discarded.

Add the MooMoo & Butter Holy Trinity seasoning to the roux and cook until fragrant, about 1 minute. Stir in the minced garlic and sliced sausage; cook for an additional 2 minutes. Sprinkle in the MooMoo & Butter Cajun Cowboy seasoning and mix well.

Slowly pour in the chicken broth, stirring constantly to combine and ensure no lumps form. Bring the mixture to a gentle boil, then reduce the heat and simmer for 5 minutes.

Stir in the chicken and cook for 2 minutes. Add the shrimp and cook until they turn pink and are cooked through, about 3 minutes. Season to taste with MooMoo & Butter Tuxedo (salt & pepper). Serve over jasmine white rice and garnish with chopped green onions.
