Rich, strawberry-forward ice cream with authentic cheesecake flavor and graham cracker crust layers throughout. A blend of macerated frozen and fresh strawberries creates a vibrant pink base, while a smooth cream cheese and pudding mixture delivers cheesecake taste without lumps. Graham cracker layers and an optional strawberry preserve swirl complete the frozen cheesecake experience.

Preparation

    Combine thawed frozen strawberries, 1/4 cup sugar, and lemon juice. Let sit 30 minutes. Mash and reserve.

    Reserve 1 cup diced fresh strawberries for mix-ins.

    Beat softened cream cheese alone for 2–3 minutes until completely smooth.

    Add sweetened condensed milk and the remaining 1/4 cup granulated sugar. Beat until smooth.

    Slowly add 1/2 cup milk while mixing.

    Add remaining milk, heavy cream, pudding mix, vanilla bean paste, and salt. Mix until silky smooth.

    Stir in mashed strawberry mixture and all accumulated juices.

    Churn according to ice cream maker instructions.

    During the last 3–5 minutes of churning, add the diced strawberries.

    Transfer one-third of the ice cream to a freezer container.

    Sprinkle with graham cracker crumbs.

    If using strawberry preserves, add small spoonfuls and lightly swirl.

    Repeat layers until all ice cream, graham crackers, and preserves are used.

Storage

Store in an airtight container in the freezer for up to 2 weeks.
